Chilled cucumber soup with fresh dill: this is super easy to do. Sauté one onion in 2 table spoons of butter, add one potato, and a couple of cucumbers. Cook for 15 min in one quart of chicken stock, salt and pepper. Purée in a blender, adjust seasoning w a little lemon juice and cool. Happy Summer Eating that is even more fun when the cucumbers come out of your own yard.
